  • 4 stalks celery, chopped
  • 1 cup chopped carrot
  • 1 small yellow onion, chopped
  • 2 cloves garlic, chopped
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 1 (14.5 ounce) can crushed San Marzano tomatoes
  • 3 tablespoons tomato paste
  • 2 teaspoons dried basil
  • salt and ground black pepper to taste
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon raw cane sugar
  • 1 teaspoon red pepper flakes

Turn on your pressure cooker and switch it to its Sauté mode. Add a generous amount of olive oil, along with chopped celery, carrot, onion, and minced garlic. Cook for 5 minutes, stirring periodically to ensure everything is well combined.

Next, add a mixture of vegetable broth, crushed and diced tomatoes, tomato paste, fresh basil leaves, salt, and pepper to the pot. Close the lid securely and lock it in place. Refer to your pressure cooker's user manual for guidance on setting the high-pressure mode, and set a 6-minute timer accordingly. Allow an additional 10-15 minutes for the pressure to build up.

While you wait, melt some butter in a small saucepan over low heat. Stir in the flour until it forms a smooth, thick paste, taking about 3 minutes to achieve this consistency.

Once the pressure has released naturally for 2 minutes, as instructed by your pressure cooker's manual, open the valve to vent any remaining pressure.

Now, use an immersion blender to carefully blend the hot soup until it reaches your desired consistency. Switch back to your pressure cooker's Sauté mode and set a timer for 3 minutes. Add the flour paste you created earlier, stirring continuously to avoid lumps.

Next, add milk, grated Parmesan cheese, sugar, and red pepper flakes to the pot. Season with additional salt and pepper if needed, stirring until everything is well combined by the time the timer goes off.
