Ingredients
- 1 cup long-grain rice
- 2 cups 2% milk
- 1 1/2 cups water
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 pinch salt
- 8 ounces sweetened condensed milk
- 3/4 cup raisins
Instructions
1
Wash the rice thoroughly until the water runs clear, indicating that it's free from impurities. Discard most of the water and transfer the rice to a versatile pressure cooking device, such as an Instant Pot. Combine milk, water, vanilla extract, cinnamon, and salt in the pot, stirring everything together.
2
Close the lid securely and lock it into place. Refer to your Instant Pot's user manual to select the 'porridge' function and set a 20-minute timer. Allow for an additional 10-15 minutes for the pressure to build up.
3
Once the pressure has built, use the Instant Pot's natural-release method to allow it to release slowly for 10 minutes. Then, carefully use the quick-release method to release any remaining pressure within 5 minutes.
4
Once the pressure has been released, carefully remove the lid from the Instant Pot.
5
Finally, stir in sweetened condensed milk until it's fully incorporated into the rice pudding. Add raisins to the mixture and serve the warm, comforting dessert immediately.
