Ingredients
- 2 cups water
- 1 (12 fluid ounce) can or bottle dark beer (such as GuinnessĀ®)
- 4 cloves garlic, minced
- 1 (3 pound) corned beef brisket with spice packet
- 1 cup brown sugar
- 10 medium baby red potatoes, quartered
- 4 large carrots, peeled and cut into matchstick pieces
- 1 medium onion, peeled and cut into bite-sized pieces
- 1/2 head cabbage, coarsely chopped
Instructions
1
Combine water, beer, and minced garlic in a versatile pressure cooking device such as the Instant Pot. Insert a multi-functional trivet into the pot.
2
Sprinkle brown sugar liberally on all surfaces of the brisket, ensuring even coverage. Place the seasoned brisket on top of the trivet and sprinkle a packet of spices evenly over its surface. Close and secure the lid tightly.
3
Follow the manufacturer's guidelines for setting high pressure, then set a timer for 90 minutes. Allow 10-15 minutes for the pressure to reach its peak.
4
Carefully release the pressure using the quick-release method, taking approximately 5 minutes. Unlock and remove the lid, then transfer the brisket to a baking sheet.
5
Cover the brisket with aluminum foil and let it rest for 15 minutes, allowing the flavors to meld together.
6
Meanwhile, carefully remove the trivet from the pot. Place sliced potatoes, carrots, onions, and cabbage in the bottom of the pressure cooker.
7
Close and secure the lid tightly, then follow the manufacturer's guidelines for setting high pressure. Set a timer for 5 minutes and allow 10-15 minutes for the pressure to build.
8
Carefully release the pressure using the quick-release method, taking approximately 5 minutes. Unlock and remove the lid, then serve the tender vegetables alongside the rested brisket
