Instant Pot Colorado Chile Verde with Hatch Chiles
Ingredients
  • 1 tablespoon olive oil
  • 1 pound chicken breasts, cubed, or more to taste
  • 1/2 large onion, diced
  • 2 roasted Hatch chile peppers - seeded, de-veined, and diced, or more to taste
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups chicken broth
  • 1 (16 ounce) jar salsa verde (green salsa)
  • 1 (15.5 ounce) can white beans, drained and rinsed
  • 2 ears corn, kernels cut from cob
  • 1/4 cup minced cilantro
  • 1/4 cup all-purpose flour
  • 1 tablespoon potato starch
  • 2 tablespoons cold water
  • 1 lime, cut into wedges

Turn on your pressure cooker and choose the Saute setting, then add a generous amount of olive oil to the pot. Next, carefully place chicken breast, sliced onion, diced chile peppers, minced garlic, ground cumin, salt, and pepper into the hot oil. Cook for approximately 5 minutes, stirring occasionally, until the chicken is nicely browned and the onions have softened and become translucent.

Now, pour in a flavorful mixture of chicken broth, salsa verde, white beans, corn kernels, and chopped cilantro. Stir everything together to combine. Switch off the Saute mode.

Close the lid and secure it firmly, then select the high-pressure setting according to your pressure cooker's instructions. Set a timer for 30 minutes and let the pressure build up over the next 10-15 minutes.

Once the pressure has released naturally, according to your manufacturer's instructions, wait for about 15 minutes. Then, carefully unlock and remove the lid from your pressure cooker.

Switch back to the Saute function and stir in a spoonful of flour. Cook the chile peppers until they thicken, taking about 1-2 minutes to achieve this. If you prefer a thicker consistency, mix equal parts potato starch and water in a small bowl before stirring it into the chile mixture with the flour. Finally, serve your delicious dish with a squeeze of lime juice.
