Instant Pot Coconut Caramel Shrimp

  • 3 tablespoons coconut water
  • 7 tablespoons white sugar
  • 1/2 cup coconut water
  • 1/4 cup fish sauce
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 tablespoons minced fresh ginger root
  • 1 tablespoon finely grated garlic
  • 1/4 teaspoon crushed black pepper
  • 2 teaspoons tapioca flour

Begin by activating your pressure cooker and choosing the Saute function on high heat. Set a timer for a total of 10 minutes to ensure everything is cooked to perfection.

Add 3 tablespoons of coconut water and sugar into the pressure cooker, stirring only once to combine. Allow it to bubble away on its own.

In a separate microwave-safe bowl, pour 1/2 cup of coconut water and heat it in the microwave on high for 1 to 3 minutes, or until it's hot.

Once your pressure cooker reaches the 'Hot' setting, you should see an amber-colored mixture. Be cautious as this is when the steam starts rising.

Carefully pour the hot coconut water into the pressure cooker, taking care not to splash any of the steam.

Add in 1-2 tablespoons of fish sauce and 1 cup of shrimp. Press the Cancel button to pause the cooking process. Close and lock the lid securely.

Follow your pressure cooker's manufacturer instructions for high-pressure cooking, setting a timer for 3 minutes. Allow an additional 10 to 15 minutes for the pressure to build up.

To release the pressure, carefully use the quick-release method according to your manufacturer's instructions. This should take around 5 minutes.

Once the steam is released, carefully remove the lid and add in 1-2 inches of grated ginger, garlic, and pepper. Stir everything together.

Press the Cancel button again and switch to the Saute function on high heat. Add 2 tablespoons of tapioca flour and whisk it into the sauce until it's well combined.

Continue cooking the sauce for about 2 minutes, or until it thickens slightly.
