Ingredients
- 1 tablespoon olive oil, or more as needed
- 1 onion, diced
- 5 cloves garlic, chopped
- 6 cups chicken stock
- 2 pounds whole skinless, boneless chicken thighs
- 1 (15 ounce) can black beans, drained and rinsed, or more to taste
- 1 (14.5 ounce) can fire-roasted tomatoes
- 1 (4 ounce) can chopped green chilies
- 1 cup diced carrots
- 1 cup diced celery
- 2 teaspoons salt
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon adobo sauce from canned chipotles, or to taste
- 2 limes, juiced
- 1 (12 ounce) package tortilla strips
- 1 cup shredded Cheddar cheese, or to taste
- 1/4 cup sour cream, or as desired
- 1 avocado, diced, or to taste
- 1 fresh jalapeno pepper, sliced
- 2 tablespoons hot sauce, or to taste

Turn on the pressure cooker and switch to its Saute mode. Heat some oil in the pot, then add sliced onions and minced garlic. Cook until the onions are tender and have lost their raw smell, about 3 to 4 minutes.

Next, pour in the stock and add diced chicken, beans, tomatoes, chiles, carrots, celery, salt, cumin, chili powder, oregano, and the adobo sauce. Mix everything together thoroughly.

Close the lid of the pressure cooker and secure it in place. Set the valve to manual high pressure mode and set a timer for 17 minutes. Allow about 10 to 15 minutes for the pressure to build up.

Once the cooking time is over, carefully release the pressure using the quick-release method as instructed by the manufacturer's guidelines. This should take around 5 minutes.

Open the lid and carefully remove it to reveal the delicious soup. Take out the chicken and shred it using two forks.

Now, return the shredded chicken back into the pot. Squeeze some fresh lime juice over it and adjust the seasoning if needed.

Finally, ladle the soup into bowls and top it with tortilla strips, shredded Cheddar cheese, a dollop of sour cream, sliced avocado, diced jalapeno peppers, and a few dashes of hot sauce.
