Instant Pot Hearty Chicken Soup
Ingredients
  • 1 tablespoon olive oil
  • 5 stalks celery, diced
  • 1 large onion, diced
  • 2 small heads garlic, peeled and chopped
  • 1 (32 fluid ounce) container chicken bone broth
  • 1 (32 fluid ounce) container chicken broth
  • 4 boneless chicken thighs, cut into 1-inch pieces
  • 2 boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 (8 ounce) package baby carrots
  • 2 tablespoons herbes de Provence
  • 1 tablespoon chicken broth base (such as Superior Touch™ Better Than Bouillon™)
  • 1 1/2 teaspoons red pepper flakes
  • salt and ground black pepper to taste
  • 2 bay leaves

Activate the pressure cooker and choose the Sauté setting. Pour in some oil, then add diced celery, onion, and minced garlic to the pot. Let them cook for 3-5 minutes until they're slightly tender.

Next, combine the bone broth, chicken broth, sliced chicken thighs and breasts, chopped carrots, dried herbs de Provence, broth base, red pepper flakes, salt, and black pepper in the pot. Close the lid securely. Set the pressure cooker to low pressure mode and set a 25-minute timer. Allow for 10-15 minutes of waiting time as the pressure builds.

After releasing the pressure naturally, following the manufacturer's guidelines, wait for 10-40 minutes. Remove the bay leaves before serving your delicious dish
