  • 14 ounces chicken breast, cut into 1-inch cubes
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (Japanese sweet wine)
  • 3/4 cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin (Japanese sweet wine)
  • 2 tablespoons hoisin sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon peanut oil
  • 3/4 cup raw cashews
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 tablespoon peanut oil
  • 2 cups green bell peppers, cut into 1-inch pieces
  • 1 medium onion, cut into eighths
  • 1 clove garlic, minced
  • 1 (8 ounce) can baby corn, drained and cut into bite-size pieces
  • 1 (8 ounce) can sliced water chestnuts, drained

Begin by placing chicken pieces in a bowl and covering them with cornstarch; make sure each piece is evenly coated. Next, sprinkle a small amount of soy sauce and mirin on top of the chicken mixture and gently stir to distribute. Set it aside for now.

In a separate bowl, combine water with 2 tablespoons of soy sauce and mirin, hoisin sauce, and 2 teaspoons of sesame oil. Whisk the mixture together until it's smooth and then set it aside for later use.

Now, turn on your pressure cooker - a versatile kitchen appliance that can handle various tasks. Set the device to its Saute function and add 1 teaspoon of peanut oil, along with some cashews, white sesame seeds, and black sesame seeds. Cook the ingredients together until they're fragrant and evenly toasted, taking about 3 minutes to achieve this.

Add another tablespoon of peanut oil, along with sliced bell peppers, onion, and minced garlic. Continue cooking the ingredients until they're softened and fragrant, which should take around 5 minutes.

Now it's time to combine the chicken mixture with the previously prepared soy sauce mixture, along with some baby corn and water chestnuts. Make sure everything is well combined before proceeding.

Finally, close the lid of your pressure cooker and secure it in place. Follow the manufacturer's instructions to set the high-pressure mode, and then set a timer for 3 minutes. Allow about 10 to 15 minutes for the pressure to build up.
