Instant Pot Beef Curry
Ingredients
  • 1 1/2 tablespoons canola oil
  • 1 onion, chopped
  • 1 1/2 pounds beef, cut into 1/2-inch or 1-inch cubes
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 medium potatoes, peeled and cubed
  • 2 carrots, peeled and chopped into 1/2-inch pieces
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 1/2 cups beef broth
  • 1 small apple, grated
  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce
  • 1 (3.5 ounce) container Japanese curry roux

Start by activating your pressure cooker and selecting its Saute mode. Heat some oil in the cooking vessel to get it warm. Add a chopped onion and cook until it becomes slightly transparent, about 3 minutes have passed.

Next, add sliced beef, minced garlic, and grated ginger to the pot. Continue cooking until the beef starts browning, which takes another 3 minutes.

Now, mix diced potatoes and carrots into the beef mixture, stirring constantly to avoid any lumps. Cook for 2 minutes more.

Add a pinch of salt and pepper to enhance the flavors in your dish.

Pour beef broth, chopped apple, ketchup, and soy sauce into the pressure cooker. Take curry roux and break it up into small pieces; place these on top of the beef mixture. Be sure not to mix them with the broth.

Turn off the Saute function and close the lid of your pressure cooker. Make sure it is locked in place to prevent any accidents. Open the valve that controls the pressure and set the high-pressure mode according to your manufacturer's instructions. Set a timer for 15 minutes.

Allow 10-15 minutes for the pressure to build up in your cooker.

Once the pressure has been released naturally, according to your manufacturer's instructions, which can take anywhere from 10-40 minutes; unlock the lid and carefully remove it.

Stir the broth gently to incorporate all the curry roux pieces, which should have melted over the top of your dish.
