Instant Pot BBQ Pulled Chicken
Ingredients
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • 2 1/2 pounds skinless, boneless chicken breasts, or more to taste
  • 1 cup water
  • 1 teaspoon hickory-flavored liquid smoke
  • 10 hamburger buns, or as needed
  • 1 cup barbeque sauce
Instructions
1
Combine salt, paprika, garlic powder, onion powder, and pepper in a bowl. Cut the chicken into 3- to 4-inch pieces and place them in a large, resealable plastic bag. Sprinkle the seasoned salt mixture evenly over the chicken pieces, seal the bag, and give it a good shake to coat the chicken thoroughly.
2
Fill a multi-functional pressure cooker with water, then place the wire rack inside the pot. Arrange the chicken pieces on the rack in a single layer. Close and secure the lid, then select the Meat/Poultry function on your cooker. Set the timer for 50 minutes to allow for proper cooking time.
3
Allow the pressure to build naturally, following the manufacturer's instructions and waiting around 10 minutes for this process to complete.
4
Transfer the shredded chicken to a bowl, then add 1/2 cup of the liquid from the pot and some liquid smoke. Mix everything together until well combined.
5
Spoon the chicken mixture onto hamburger buns and top it with a generous helping of barbeque sauce.
