Ingredients
- 1 tablespoon olive oil
- 4 slices bacon, diced
- 1/2 onion, diced
- 3 cloves garlic, minced
- 2 pounds asparagus, cut into 1 1/2-inch pieces
- 2 1/2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup heavy whipping cream
Instructions
1
Turn on the pressure cooker, switching it to its Saute mode, and pour in some olive oil. Add a few slices of bacon to the warmed oil and cook for 2 minutes, stirring occasionally.
2
Next, add a diced onion to the pot and continue cooking until it becomes soft and translucent, taking about 5 minutes.
3
Now, add minced garlic and chopped asparagus to the pot. Cook for an additional 1-2 minutes, stirring occasionally.
4
Pour in some chicken broth over the asparagus mixture and bring it to a boil. Switch off the Saute mode and press the Manual setting on the pressure cooker. Close and secure the lid tightly, then select High Pressure according to the manufacturer's guidelines. Set a timer for 5 minutes and wait patiently.
5
Allow 10-15 minutes for the pressure to build up inside the cooker.
6
Once the pressure has built, release it naturally using the manufacturer's instructions - this may take anywhere from 10 to 40 minutes.
7
Carefully unlock and remove the lid of the pressure cooker.
8
Use an immersion blender to puree the asparagus mixture until it's smooth and creamy.
9
Add some heavy cream to the pot and switch it back to its Saute mode, cooking until the soup is warmed through but not boiling.
10
Taste and season the soup with salt and pepper to your liking
