Instant Pot Apple Glazed Pork Tenderloin
Ingredients
  • 2 teaspoons olive oil
  • 1 (2 pound) pork tenderloin, or to taste
  • 1 teaspoon Greek seasoning
  • salt and ground black pepper to taste
  • 1 cup apple juice
  • 1 tablespoon cornstarch

Turn the pressure cooker to its multi-functional mode and choose the Saute setting. Allow the olive oil to warm up until it starts to shimmer, approximately 3-5 minutes.

Next, sprinkle the pork tenderloin with a blend of Greek seasoning, salt, and pepper. Place the seasoned meat into the preheated pot and cook for about 3 minutes on each side, or until it develops a nice brown color. Remove the tenderloin from the pot and set it aside on a plate.

Pour apple juice into the now-empty pot, scraping up any browned bits that have accumulated at the bottom. Place a metal rack inside the pot and carefully position the tenderloin on top of it.

Close and secure the lid, following the manufacturer's guidelines. Set the pressure cooker to high pressure according to its instructions and set a timer for 10 minutes. Allow about 10-15 minutes for the pressure to build up.

Release the pressure in a natural manner, allowing it to take 10 minutes as per the manufacturer's instructions. Then, quickly release any remaining pressure. Unlock and remove the lid, taking care not to let the hot steam escape.

Take the tenderloin out of the pot and set it aside to rest for 5 minutes, allowing the juices to redistribute.

Meanwhile, carefully pour out about 1/4 cup of the liquid from the pot and mix it with cornstarch to create a thickening slurry. Return the slurry back into the pot and select the Saute function once more. Simmer the sauce over low heat until it thickens, approximately 5 minutes.

Slice the pork tenderloin and drizzle the rich sauce over it.
