Indonesian Fried Rice

  • 3 large eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 leek, chopped
  • 2 green chile peppers, chopped
  • 1 clove garlic, minced
  • 1/2 pound skinless, boneless chicken breasts, cut into thin strips
  • 1/2 pound peeled and deveined prawns
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cup uncooked white rice
  • 3 tablespoons sweet soy sauce (Indonesian kecap manis)

Preheat a large nonstick skillet over medium heat, allowing it to reach the optimal temperature.

Spray a generous amount of nonstick cooking spray onto the skillet's surface to prevent food from sticking.

Next, pour eggs into the hot skillet and let them cook until the edges start to solidify.

Gently lift the edges of the omelet, allowing any uncooked egg to flow towards the center of the pan, approximately 1 minute.

Flip the omelet in one piece and continue cooking until it's fully set, roughly 30 seconds.

Transfer the omelet to a cutting board and slice it into thin strips, approximately 1/2 inch in length. Set the omelet aside for later use.
