Ingredients
- 3 (3 ounce) packages ramen noodles (without flavor packets)
- 1 tablespoon vegetable oil
- 1 pound skinless, boneless chicken breast halves, cut into strips
- 1 teaspoon olive oil
- 1 teaspoon garlic salt
- 1 pinch ground black pepper, or to taste
- 1 tablespoon vegetable oil
- 1/2 cup chopped shallots
- 5 cloves garlic, chopped
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup broccoli florets
- 1 cup sliced fresh mushrooms
- 1/4 cup soy sauce
- 1/4 cup sweet soy sauce (Indonesian kecap manis)
- 1/4 cup oyster sauce
- salt and pepper to taste
Instructions
1
Heat the water in a large pot until it reaches its boiling point, and cook the ramen noodles until they are tender and soft. This should take around 3 minutes. Then, transfer the noodles to a bowl of cold water to stop the cooking process, and drain them in a colander placed over the sink. Next, drizzle 1 tablespoon of vegetable oil over the noodles and set them aside.
2
In a separate bowl, combine the chicken strips with olive oil, garlic salt, and black pepper. Heat 1 tablespoon of oil in a large wok over extremely high heat, and cook the chicken until it is no longer pink. This should take around 5 minutes. Then, add the minced shallots and garlic to the wok and stir-fry until they start to turn a golden brown color.
3
Add the chopped cabbage, carrots, broccoli, and mushrooms to the wok, and stir-fry until they are tender. This should take another 5 minutes.
4
Now, combine the cooked noodles with the vegetables and chicken in the wok. Stir in 1 tablespoon of soy sauce, 1 tablespoon of sweet soy sauce, and 1 tablespoon of oyster sauce. Mix everything together until the noodles are well coated with the sauces and the vegetables and chicken are evenly distributed. Bring the mixture to a gentle simmer, sprinkle with salt and pepper to taste, and serve hot
