Indian Sweet Bread Pudding
Ingredients
  • 1 quart half-and-half
  • 2 cups white sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 1 loaf sliced bread, crusts removed, divided
  • oil for frying
Instructions
1
Combine half-and-half, sugar, and condensed milk in a large cooking vessel over medium-low heat. Heat the mixture until it reaches a gentle boiling point; continue to cook until it has reduced in volume by half, approximately 55 minutes.
2
Soften two slices of bread in the half-and-half mixture using a gentle stirring motion; blend the mixture with an immersion blender until it reaches a thick, creamy consistency.
3
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Heat a substantial amount of oil in a deep-frying device or large saucepan. Fry the remaining bread slices in batches until they are golden brown, approximately 1 minute per side. Remove excess oil with paper towels.
4
Cut the bread slices at a diagonal; arrange the slices in a 9x12-inch baking dish. Pour enough of the half-and-half mixture over the bread slices to evenly saturate them.
5
Place the baking dish in the preheated oven and bake until it is bubbly, approximately 20 minutes. Flip the bread slices over and continue baking for an additional 5 minutes.
