  • 1 cup split Bengal gram (chana dal)
  • 1 cup skinned split black lentils (urad dal)
  • 1/2 cup split yellow lentils (moong dal)
  • 1 cup rice
  • salt to taste
  • 2 dried red chile peppers, or to taste
  • water, as needed
  • 2 tablespoons cumin seeds
  • 2 tablespoons cooking oil

Combine chana dal, urad dal, moong dal, and rice in a large container, then cover it with several inches of cool water. Allow the mixture to soak for an extended period of 8 hours or overnight.

Using a mortar and pestle, grind the soaked dal, rice, salt, and red chile peppers into a smooth, consistent paste. Add sufficient water to the mixture until you achieve a thin batter consistency that can be easily spread.

Stir cumin seeds into the prepared batter, ensuring they are evenly distributed throughout.

Heat a griddle or tawa over medium heat. Lightly coat the edges and middle of the griddle with oil to prevent sticking.

Carefully pour the batter onto the preheated griddle, spreading it into a thin circle using the back of a ladle or a large spoon. Cook for a short while, then flip over to the other side and cook for a few more minutes.
