  • 1 cup chopped roma (plum) tomatoes
  • 2 cups cauliflower, finely chopped
  • 1 cup chopped cabbage
  • 1 cup green peas
  • 1 cup grated carrots
  • 4 potatoes, boiled and mashed
  • 3 tablespoons pav bhaji masala
  • salt to taste
  • 1 tablespoon lemon juice
  • 8 (2 inch square) dinner rolls
  • 1/2 tablespoon butter
  • 1/4 cup finely chopped onion
  • 1 tablespoon finely chopped green chile peppers
  • 1/4 cup chopped fresh cilantro

Preheat the wok over medium heat, allowing the oil to warm up. Sear minced garlic and chopped green chile for 30 seconds, followed by the addition of sliced onions and grated ginger. Continue cooking until the onions achieve a rich brown color, then introduce diced tomatoes into the mix. Cook until the mixture thickens and becomes pasty in texture, stirring occasionally. Next, combine the vegetables of your choice - cauliflower, cabbage, peas, carrots, and potatoes - into the wok. Season with pav bhaji masala to add depth of flavor, cover the wok, and cook for 15 minutes, stirring periodically. Finally, add a pinch of salt to taste, followed by a squeeze of lemon juice for added brightness. Serve hot alongside toasted dinner rolls, lightly spread with butter and garnished with a sprinkle of chopped onion, green chile, and fresh cilantro.
