  • 1 1/2 cups chicken stock, or as needed
  • 1 cup apricot preserves
  • 1/4 cup white vinegar
  • 1 teaspoon hot pepper sauce (such as Tabasco®)
  • 1 teaspoon lime zest
  • 1 tablespoon butter

Prepare the chicken by sprinkling it with a blend of aromatic spices, including ground cumin and paprika, salt, and black pepper; put it aside momentarily.

Heat a generous amount of fragrant olive oil in a large skillet over a moderate heat setting. Sauté the sliced onions in the hot oil until they become translucent and tender, taking around 5 minutes. Introduce the chicken pieces into the skillet; cook and stir constantly until the exterior of the chicken is no longer pink, approximately 5 minutes. Remove the mixture from the pan and set it aside for a moment.

Pour 1 cup of rich chicken broth into the skillet and bring to a gentle boil. Scrape up any browned residue that has accumulated at the bottom of the pan; stir in a sweet and tangy apricot jam and white vinegar. Adjust the sauce's consistency by adding more chicken broth if necessary to achieve a smooth texture. Season with a dash of spicy hot sauce to taste. Return the chicken to the pan; simmer until it is fully cooked through, taking around 10 minutes. Stir in some grated lime zest and melted butter before presenting the dish.
