Ingredients
- 2 tablespoons bacon grease
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 3/4 teaspoon salt
- 1 teaspoon crushed red pepper flakes
- 3 tablespoons paprika
- 1 (2 to 3 pound) whole chicken, cut into pieces
- 1 cup water
- 1 (14.5 ounce) can diced tomatoes
- 2 tablespoons all-purpose flour
- 1 (8 ounce) container sour cream

Preheat a large skillet over medium heat by allowing it to warm up for a few minutes. Add the bacon grease to the skillet and let it melt, creating a rich base for our dish. Next, add sliced onions, minced garlic, salt, red pepper flakes, and paprika to the skillet. Stir everything together and cook until the onions become translucent and start to soften, releasing their natural sweetness.

Now it's time to add the protein - chicken pieces. Pour water over the top of the chicken, making sure it's fully submerged in liquid. Continue to cook over medium heat for a prolonged period of 1 hour, stirring occasionally and adding more water as needed to maintain the desired consistency.

As we near the end of our cooking time, it's time to add a burst of juicy flavor - diced tomatoes. Reserve the liquid from the tomatoes, as we'll be using it later to create a creamy sauce.

To make our sauce, combine the reserved tomato liquid with flour and sour cream in a separate bowl. Mix everything together until you have a smooth, well-blended paste. Slowly pour this mixture into the skillet with the chicken, stirring constantly to avoid lumps.

Finally, continue to cook our dish over medium heat until the sauce thickens and coats the chicken evenly.
