Hungarian Beef Goulash
Ingredients

  • 2 large onions, finely sliced
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons Hungarian paprika
  • 1 cup water, or as needed
  • salt and ground black pepper to taste

Heat the lard in a substantial container over an intermediate temperature. Cook and agitate the onions in hot lard until they become tender and semi-transparent, taking anywhere from 5 to 8 minutes.

Combine the beef and paprika with the onions. Decrease the heat to a low setting and let it simmer for 1 hour, stirring occasionally. Introduce 1 cup of water into the mixture and let it simmer, adding more water if the moisture level becomes too low, until the meat disintegrates and the onion sauce thickens, approximately 1 hour more.
