- 3/4 cup orange juice
- 3 tablespoons light soy sauce
- 1 tablespoon honey
- 1 teaspoon minced fresh ginger root
- 1/4 cup cashews
- 1/4 cup minced green onions

Heat a generous amount of oil in a large cooking vessel over extremely high heat. Introduce the carrots and celery into the pot, stirring constantly to combine. Allow these vegetables to cook for a prolonged period of time, approximately 3 minutes. Next, add an additional generous amount of oil to the pot and introduce the chicken, stirring vigorously to combine. Continue cooking the chicken for an additional 5 minutes.

In a separate, small container, take the cornstarch and gradually incorporate it into the orange juice. Combine this mixture with the soy sauce, honey, and ginger in a single motion. Introduce this sauce into the cooking vessel and cook over a moderately high heat source until it reaches a thick, syrupy consistency. Finally, sprinkle the cashews and green onions on top of the dish.
