  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 tablespoon yellow mustard
  • 1 (.25 ounce) package active dry yeast
  • 2 teaspoons brown sugar
  • 1 cup warm water (100 to 110 degrees F)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons canola oil
  • 5 quarts water
  • 1/4 cup baking soda
  • 2 tablespoons unsalted butter, melted
  • coarse sea salt to taste

Combine mayonnaise, Dijon mustard, and honey in a small bowl to create the sauce. Place it in the refrigerator while you prepare the pretzel sticks.

Combine yeast and brown sugar in a small bowl; add warm water, stirring until the sugar dissolves. Allow it to sit for 5 minutes, becoming frothy.

In a bowl of a stand mixer fitted with a dough hook attachment, mix flour and salt together. Gradually pour in the yeast mixture, adding canola oil as you go, kneading until smooth and silky for 4 to 5 minutes. If the dough is extremely sticky, add a bit more flour.

Shape the dough into a ball and transfer it to a large greased bowl. Cover with plastic wrap and let the dough rise until it has doubled in size, taking about 45 minutes.

Punch down the dough and turn it out onto a lightly floured surface. Flatten it into a rectangle and cut it into 12 equal pieces. Roll each piece into a stick about 7 inches long. Arrange the sticks on a baking sheet lined with parchment paper; let them rest uncovered for about 25 minutes.

Preheat your oven to 450 degrees F (230 degrees C).

Fill a large, deep pot with about 5 quarts of water and stir in baking soda. Bring the mixture to a boil, then reduce the heat to medium. Carefully place the pretzel sticks in the simmering water in batches for 30 seconds, flipping them after 15 seconds. Remove from the water and let drain on paper towels.

Transfer the sticks back to the baking sheet. Brush them lightly with butter and sprinkle with coarse sea salt.
