- 10 (10 pound) shank ham

Combine brown sugar, honey, molasses, orange juice, and mustard in a saucepan over medium-low heat. Stir constantly until the mixture thickens, approximately 45 minutes. Remove from heat and allow the glaze to mature for an extended period of time, ideally 8 hours or overnight.

Preheat your oven to a moderate temperature of 225 degrees F (110 degrees C). Position the ham in a suitable roasting pan.

Place the ham in the preheated oven and bake, checking on it periodically, for around 10 hours. If the ham begins to darken excessively during this time, cover it with aluminum foil to prevent overcooking. Continue baking for an additional 2 hours before proceeding.

Increase the oven temperature to a higher setting of 275 degrees F (135 degrees C). Bake, ensuring the ham is thoroughly coated with the glaze mixture every 30 minutes. This process should take approximately 2 hours more.

Once done, remove the ham from the oven and permit it to rest for 15 to 20 minutes before slicing. Serve any remaining glaze alongside the ham, if desired.
