  • 3 pounds butternut squash, peeled and cubed
  • 1 large onion, sliced
  • 3 tablespoons butter
  • 1 tablespoon sea salt
  • 1 teaspoon freshly-cracked white pepper
  • 4 cups chicken broth, or more as needed
  • 1/4 cup honey
  • 1/2 cup heavy whipping cream
  • 1 pinch ground nutmeg, or more to taste

Preheat a large pot over high heat, filling it with olive oil. Sear the squash in the hot oil until it reaches a deep golden brown, approximately 10 minutes. Add the onion, butter, sea salt, and white pepper to the pot, stirring constantly until the onions are fully tender and starting to develop a rich brown color, around 10 minutes.

Mix in the chicken broth and honey, causing the mixture to come to a rolling boil. Gradually decrease the heat to medium-low and let it simmer until the squash is tender, roughly 5 minutes.

Carefully pour the mixture into a blender, leaving about half of the container empty. Secure the lid in place and pulse the blender a few times before leaving it running to blend. Continue blending the mixture in batches until it reaches a smooth consistency.

Mix in the cream and add a pinch of nutmeg, then taste and adjust the seasoning with salt and white pepper as needed.
