- 1/2 cup honey
- 2 2/3 fluid ounces cognac (such as Hennessy)

Dredge salmon fillets in a mixture of freshly squeezed lemon and lime juice, coating them evenly.

In a separate bowl, blend minced garlic with onion powder, Cajun seasoning, and paprika to create a flavorful spice blend.

Reduce honey in a small saucepan over medium-low heat until it reaches a gentle bubble. Gradually add the garlic spice blend and cognac, stirring constantly to combine flavors. Allow the sauce to simmer for 5 minutes, or until it has thickened slightly and reduced by half. Let the sauce cool to room temperature, allowing it to thicken further, 10-15 minutes.

Position an oven rack approximately 6 inches above the heat source and preheat the broiler to its highest temperature setting. Anoint salmon fillets with olive oil, then sprinkle them generously with pink salt and a few grinds of black pepper.

Place the salmon under the broiler for 6-8 minutes, or until it reaches a golden brown color and flakes easily with a fork. Drizzle the cognac-honey sauce over the salmon, then continue broiling for an additional 3-4 minutes, or until it reaches a light brown color and is cooked through.
