Ingredients
- 1 1/2 pounds boneless pork chops
- 1/2 cup chicken broth
- 1 (18 ounce) bottle honey barbecue sauce, or to taste
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can whole kernel corn, drained
- 1/2 cup salsa, or to taste
- 12 (6 inch) flour tortillas, or as needed
- 1/2 cup crumbled cotija cheese, or to taste
- 1/2 cup shredded lettuce, or to taste
- 1/2 cup diced tomatoes, or to taste

Place pork chops in a slow cooker with the broth. Place the slow cooker on High and cook until the meat becomes tender enough to be easily pulled apart, approximately 4 hours.

Transfer the cooked pork chops to a plate and shred them when they have cooled down enough to be handled comfortably.

Return the shredded pork chops to the slow cooker and set it to Low.

Add barbecue sauce, black beans, and corn to the slow cooker. Mix everything together until it's well incorporated.

Cover the slow cooker and cook on Low until the filling is heated through, roughly 1 hour.

Stir in half a cup of salsa to give the dish an extra boost of flavor. Taste it and adjust the seasoning by adding more barbecue sauce or salsa if necessary.

Serve the filling in tortillas. Top it with crumbled cotija cheese, crisp lettuce leaves, and juicy tomato slices.
