Honduran Bean and Avocado Wraps

  • 2 cups all-purpose flour
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/2 teaspoon salt
  • 2 cups refried beans, warmed
  • 1 avocado, sliced
  • 1/2 cup crumbled queso fresco (fresh white cheese)
  • 1/4 cup crema fresca (fresh cream)

Combine flour, water, vegetable oil, egg, and salt in a spacious mixing container. Thoroughly blend the ingredients until they form a cohesive dough, eliminating any stickiness. Divide the mixture into eight portions and shape each one into a rounded ball. Place them under a covering lid to relax for approximately 20 minutes.

Gradually expand each dough ball into a thick, flat tortilla.

Heat a large skillet over medium-high heat and prepare for cooking. Cook each tortilla until it is nicely browned and has a slight puff, taking about 1 minute on each side.

Arrange refried beans, sliced avocado, and crumbled queso fresco on top of warm tortillas. Drizzle a layer of crema over the ingredients. Fold the tortillas in half to consume them easily.
