Ingredients
- 3 pounds russet potatoes, peeled and cut into 1-inch pieces
- 1 tablespoon salt, divided
- 3/4 cup half-and-half
- 1/2 cup butter
- 1/4 teaspoon black pepper
- chopped fresh parsley, for garnish

Place potatoes in a large saucepan and cover them completely with cold water, leaving about 1 inch of space at the top. Add 1 1/2 teaspoons of salt to the water and bring the mixture to a rolling boil over medium-high heat.

Boil the potatoes for 10 minutes, or until they are tender enough to be pierced with a fork but still retain some of their shape. Remove the potatoes from the heat and drain off any excess water.

Return the potatoes to the saucepan and gently warm them over low heat, stirring occasionally, until all of the moisture has evaporated and the potatoes are dry.

Mash the hot potatoes with a potato ricer into a large serving bowl.

In a separate saucepan, warm half-and-half over medium-low heat until it is steaming hot and the butter has melted. This should take about 3 minutes.

Slowly pour the warmed half-and-half into the bowl with the mashed potatoes, stirring constantly to combine. Add a pinch of pepper and sprinkle in the remaining 1 1/2 teaspoons of salt to taste.

Finish the dish by garnishing it with a sprinkle of fresh parsley.
