- 4 cubes chicken bouillon
- 1 tablespoon whole black peppercorns, or to taste
- 3 bay leaves
- water to cover

Combine the turkey carcass, chopped onions, sliced carrots, diced celery, green bell pepper segments, minced garlic, chicken bouillon cubes, whole peppercorns, and bay leaves in a large stockpot; add sufficient water to submerge the ingredients.

Heat the mixture over high flames until it reaches a rolling boil, then decrease the heat to a low simmer and allow the flavors to meld together for approximately 1 hour.

After the mixture has cooled slightly, remove it from the heat source and let it rest for 15 minutes.

Carefully pour the liquid through a fine-meshed cheesecloth, discarding the solids that have settled to the bottom.
