Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 1/4 cup chopped celery
- 1 small garlic clove, minced
- 1 pound ground beef
- 40 ounces Italian-style stewed tomatoes
- 2 (6 ounce) cans tomato paste
- 1 (8 ounce) package sliced mushrooms, or to taste
- 1/2 cup grated Parmesan cheese, or to taste
- 1/4 cup parsley
- 1 1/2 teaspoons salt
- 1 teaspoon white sugar
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon dried oregano
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon baking soda, or to taste
Instructions
1
Heat a generous amount of olive oil in a substantial cooking vessel over a moderately high heat setting. Sear the onion, celery, and garlic in the hot oil until they become tender and lose their crunchiness, taking around 5 minutes. Introduce the beef into the pot and cook, stirring constantly to break it down into smaller pieces, until it loses its pink hue, adding an additional 5 to 7 minutes to the cooking time.
2
Combine the stewed tomatoes and tomato paste with the beef mixture, stirring until they blend seamlessly together; add the mushrooms, Parmesan cheese, parsley, salt, sugar, nutmeg, oregano, and black pepper to the pot. Cook, stirring occasionally, until the sauce has developed a rich and satisfying flavor profile, taking approximately 10 minutes.
3
Add a pinch of baking soda to the sauce and continue cooking until you can discern a noticeable decrease in acidity, taking around 10 minutes more to achieve the desired result.
