Preheat your oven by setting the temperature to 310 degrees F (155 degrees C).

Next, take a baking pan with an 8x12-inch size and cover the bottom and sides with parchment paper, ensuring that the paper extends at least 2 inches above the edges of the pan.

Subsequently, apply butter to the parchment paper for better adhesion.

Now, combine sugar, golden syrup, water, and vanilla extract in a large saucepan with thick bottoms. Place the saucepan over medium heat and bring the mixture to a boil, avoiding any stirring motion during this process. Allow it to reach 310 degrees F (155 degrees C) or until a small amount of syrup, when dropped into cold water, forms hard and brittle threads, approximately 10 minutes.

After that, dip a pastry brush in water and use it to coat the sides of the pan. This step is necessary if any sugar crystals form on the sides of the pan.

Once the saucepan has cooled down, carefully add baking soda to it and stir quickly until the mixture stops foaming and turns golden.

Immediately pour the prepared mixture into the greased baking pan.

Finally, allow the mixture to cool and set in the pan for about 15 minutes. Break it into bite-sized pieces once it's set and serve.
