- 3 pounds quinces, cored and chopped, peels on
- 1/4 cup lemon juice

Prepare the sterilization process by submerging eight ½-pint jars in boiling water for a minimum of 5 minutes, and have new lids at the ready.

Next, fill a large container with quinces and pour in water to create a flavorful base. Bring the mixture to a rolling boil, then gradually decrease the heat to a low simmer; let it cook, covered, for 15 minutes.

Strain the liquid from the quinces to extract 4 cups of juice, and then combine it with sugar and lemon juice in a heavy-bottomed pot. Bring the mixture to a high-heat boil, stirring constantly to prevent scorching.

Once boiling, add pectin and return the mixture to a high-heat boil, stirring continuously for 1 full minute.

Immediately remove the pot from the heat source and skim off any foam that forms on the surface.

Fill hot, sterilized jars with the jelly mixture using a ladle, and then process them in a boiling water bath for 10 minutes to seal the jars.
