Homemade Pittsburgh Sandwich
Ingredients
  • 3 cups shredded cabbage
  • 2 tablespoons vegetable oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons white sugar
  • 1 teaspoon adobo seasoning (such as Goya®)
  • 1 teaspoon ground black pepper
  • 4 cups vegetable oil for frying
  • 3 whole russet potatoes
  • 8 thick slices Italian bread
  • 1 pound sliced pastrami (divided)
  • 4 slices provolone cheese
  • 8 slices tomato
Instructions
1
Prepare the coleslaw: Combine shredded cabbage, oil, vinegar, sugar, adobo seasoning, and a generous amount of black pepper in a bowl until everything is fully incorporated. Cover the mixture and refrigerate until it's time to serve.
2
Prepare the fries: Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Peel and slice potatoes into thin strips, about a quarter of an inch thick.
3
Fry the potato slices in the preheated oil until they turn a golden brown and rise to the surface, taking around 4 to 5 minutes. Remove excess oil by placing the fries on a paper towel-lined plate.
4
Assemble the sandwiches: Preheat your oven to 225 degrees F (110 degrees C). Arrange bread slices on a baking sheet.
5
Toast the bread in the preheated oven until it's lightly browned, taking around 3 to 5 minutes.
6
Transfer four slices of bread to a plate. Cover the remaining four slices on the baking sheet with pastrami and melted provolone cheese. Return to the oven and cook until the pastrami is hot and the cheese is melted, approximately 5 minutes.
7
Transfer the sandwiches to individual plates. Top each one with French fries, coleslaw, two tomato slices, and the remaining bread slices.
