Ingredients
- 12 ounces persimmon flesh, cut into small chunks
- 5 ounces white sugar
- 3 ounces persimmon skin, finely sliced
- 2 tablespoons lemon juice
- 3/4 ounce lemon zest, finely sliced

Combine persimmon pulp, sugar, persimmon peel, lemon juice, and a sprinkle of lemon peel in a small saucepan over medium heat; bring to a rolling boil. Decrease the heat to low and gently simmer until the persimmon pulp becomes tender and the jam reaches a thick, syrupy consistency, approximately 10 minutes.

Allow the jam to chill until it has reached a set state, roughly 30 minutes. Transfer the jam to an airtight vessel and store it in the refrigerator for later use.
