- 4 1/2 cups white sugar
- 1 (2 ounce) package dry pectin

Gather all necessary ingredients and equipment before commencing the jam-making process.

Crush 1 cup of chopped peaches in the base of a large saucepan, taking care not to mash them completely. Add any remaining peaches and set the pan over a low heat setting, utilizing medium-low heat to prevent scorching.

Allow the mixture to simmer gently until the peaches have transformed into a liquid state, with only a few residual pieces of fruit remaining. This process should take approximately 20 minutes.

Transfer the cooked peaches to a serving bowl, then measure out 6 cups of peaches and return them to the saucepan. Add granulated sugar and bring the mixture to a boil over medium heat, stirring occasionally.

Gradually incorporate dry pectin into the saucepan mixture, allowing it to boil for a full minute before removing from heat.

Proceed to fill hot, sterilized jars with the jam, ensuring that each jar is filled to within 1/4 inch of its capacity. Utilize a clean knife or thin spatula to remove any air bubbles that may have formed within the jars. Wipe the rims of the jars with a damp paper towel to remove any residue.

Position a rack in the bottom of a large stockpot and fill it halfway with water. Bring the water to a boil, then carefully lower the jars 2 inches apart into the boiling liquid using a suitable holder. Pour in additional boiling water to cover the jars by at least 1 inch, ensuring they are fully submerged.

Return the stockpot to a rolling boil, cover it with a lid, and process the jars for 10 minutes.
