- 1 bay leaf
- 1 onion, quartered
- 1 cup vegetable broth
- 3 cups water
- 2 cloves cloves garlic, crushed
- 1 lemon, juiced
- 2 tablespoons soy sauce
- black pepper to taste
- 1/4 cup tahini
- 1/4 cup chopped fresh parsley

Clean and prepare the garbanzos and soybeans by washing them thoroughly, then place them in a pressure cooker along with the bay leaf and onion. Add vegetable broth and sufficient water to submerge the beans by 1 inch, or adhere to the manufacturer's guidelines for the minimum liquid requirement.

Close the lid and initiate high pressure; subsequently, reduce the heat to low and cook, maintaining elevated pressure, for 1 hour. Permit the pressure to naturally decrease.

Discard the solids and reserve the liquid, then transfer the beans to a food processor bowl. Combine the garlic, lemon juice, soy sauce, black pepper, and tahini; blend until a smooth consistency is achieved. (You can add some of the cooking liquid to achieve a thinner texture.) Transfer the mixture into a bowl and mix in the parsley.
