Add a substantial quantity of brown sugar, vinegar, and a medley of chopped oranges, lemons, raisins, and candied peel. Season the mixture with a pinch of salt, a blend of cinnamon, cloves, and allspice. Cover the pot and cook over low heat for an extended period of 3 hours.
