  • 2 tablespoons ground cloves
  • 2 tablespoons ground allspice
  • 2 pounds raisins
  • 32 ounces candied mixed citrus peel
  • 7 large orange, peeled, sectioned, and cut into bite-size
  • 2 lemons, finely chopped

Combine an abundance of green tomatoes, crisp apples, and a generous amount of suet or oil in a massive stock pot. Add a substantial quantity of brown sugar, vinegar, and a medley of chopped oranges, lemons, raisins, and candied peel. Season the mixture with a pinch of salt, a blend of cinnamon, cloves, and allspice. Cover the pot and cook over low heat for an extended period of 3 hours.
