Homemade Grape Jelly
Ingredients
  • 3 1/2 pounds Concord grapes
  • 1/2 cup water
  • 7 cups white sugar
  • 1 (3 ounce) pouch liquid pectin

Gather all necessary ingredients before commencing the recipe.

First, sort and thoroughly wash the grapes; discard any stems that are not suitable for consumption. Next, place the cleaned grapes into a large cooking vessel and crush them thoroughly.

Now, add water to the kettle and cover it. Bring the mixture to a rolling boil over high heat, then reduce the heat to low and let it simmer for 10 minutes.

Once the cooking time has elapsed, remove the kettle from the heat source. Carefully pour the extracted juice into a strainer positioned over a large, clean container to separate the liquid from any solids. Allow the juice to rest in a cool environment for 8 hours or overnight, as this will help prevent the formation of crystals within the jelly.

Next, strain the juice through a double layer of damp cheesecloth to remove any remaining solids or impurities.

Now, measure 4 cups of the extracted juice into a large cooking pot and add sugar. Bring the mixture to a rolling boil, stirring constantly.

Following this, stir in pectin and allow the mixture to boil for 1 minute. Remove the pot from the heat source and skim off any foam that forms on the surface.

With the jelly mixture now ready, pack it into hot, sterilized jars, filling each one to within 1/4 inch of the top. To remove any air bubbles, run a clean knife or thin spatula around the insides of the jars. Finally, wipe the rims with a moist paper towel to remove any residue.

Top each jar with a sterile lid and screw the ring on tightly.

To ensure the jars are properly sealed, place a rack in the bottom of a large stockpot and fill it halfway with water. Bring the water to a boil, then lower the jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover the jars by at least 1 inch, then bring the mixture back to a rolling boil. Cover the pot and process for 5 minutes.

Finally, press the center of each lid with your finger to ensure it does not move up or down. Remove the rings for storage and store the jars in a cool, dark area.
