Homemade Fortune Cookies
Ingredients
  • cooking spray
  • 1 large egg white
  • 1/8 teaspoon vanilla extract
  • 1/4 cup unbleached all-purpose flour
  • 1/4 cup white sugar
  • 1 pinch salt
Instructions
1
Preheat the oven to 400 degrees F (200 degrees C).
2
To begin, prepare your baking space by generously greasing two cookie sheets with cooking spray. This will ensure easy removal of the cookies once they're baked.
3
Create a unique and personalized touch by writing fortunes on strips of paper, approximately 4 inches long and 1/2 inch wide. This will add an extra layer of fun to your baked goods.
4
Mix egg white and vanilla together in a bowl until they form a smooth, foamy consistency. Be careful not to overmix.
5
Incorporate flour, sugar, and salt into the mixture by sifting them in. Stir until everything is well combined.
6
Using a spoon, drop two generous portions of the batter onto one prepared cookie sheet. Make sure to leave enough space between each cookie, at least 4 inches apart.
7
Using a spatula, gently tilt the sheet to spread the batter evenly into 3-inch-diameter circles.
8
Bake the cookies in a preheated oven until they're pale in the center and golden on the outer 1/2-inch edge, approximately 5 minutes.
9
Remove the cookies from the oven and quickly lift one with a wide spatula. Place it upside down onto a wooden board.
10
Carefully place a fortune on the cookie, positioning it close to the middle. Fold the cookie in half around the paper.
11
Place the folded edge over the rim of a measuring cup or coffee mug. Gently pull the pointed edges down, one inside and one outside.
12
Place the cookie into a muffin tin or egg carton to hold its shape as it cools. Repeat this process for the second cookie.
13
While one batch is baking, repeat the previous steps to form and fill two more cookies on the second cookie sheet.
14
Once you've shaped the first batch of baked cookies, bake the second batch.
15
Repeat this process until all cookies are baked and shaped.
