Combine the honey and yeast in a large bowl, adding warm water to create a mixture. Allow it to sit for 10 minutes, until it reaches a smooth consistency.

Next, incorporate 1 cup of flour, salt, and 3 tablespoons of olive oil into the yeast mixture. Mix until everything is well combined and then gently fold in the remaining 1 cup of flour to achieve a smooth texture. Knead the dough for about 7 minutes, until it becomes elastic and soft.

As you knead, add just enough flour to keep the dough from becoming sticky. To prevent sticking, lightly oil a large bowl and place the dough inside, coating it evenly with oil. Cover the bowl with a damp cloth and let the dough rise in a warm environment until it has doubled in size, approximately 1 hour.

Once the dough has risen, remove it from the bowl and transfer it to a lightly floured surface. Roll out the dough into a thin rectangle, about 1/2 inch thick. Place the dough in a greased 9x13 inch pan or baking sheet, covering it with a clean cloth to allow it to rise further. Let the dough double in size again, about 40 minutes.
