  • 1/4 cup warm water
  • 1 cup cottage cheese, room temperature
  • 2 tablespoons white sugar
  • 1 tablespoon butter, room temperature, plus more as needed
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 teaspoons dill seed
  • 1 tablespoon dried minced onion
  • 1 egg
  • 2 1/4 cups all-purpose flour, or more if needed

Combine warm water and yeast in a bowl, allowing it to rest for 10 minutes.

Combine cottage cheese, sugar, butter, salt, and baking soda in a large mixing bowl. Add dried onion, dill seed, egg, and the yeast mixture; mix until well combined. Gradually incorporate flour into the mixture, adding it 1/4 cup at a time and stirring thoroughly after each addition. If the dough proves too sticky, add an additional 1 to 2 tablespoons of flour.

Cover the bowl with a clean cotton towel and place it in a warm location until the dough has doubled in size, approximately 1 hour.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Generously butter a baking dish with dimensions of 1 1/2 to 2 quarts.

Gently knead the dough to release any air bubbles. Transfer the dough to the prepared baking dish.

Bake in the preheated oven until it reaches a golden brown color, approximately 35 minutes. Remove from the oven and brush the top with melted butter; sprinkle a pinch of salt over it. Allow the pastry to remain in the pan for 5 minutes before transferring it to a wire rack to cool completely.
