- 4 medium carrots, peeled and chopped
- salt and ground black pepper to taste
- 5 cloves garlic, minced
- 1/2 teaspoon ginger paste
- 10 cups chicken stock
- 1 whole cooked rotisserie chicken - skinned, boned, and meat shredded
- 1 tablespoon soy sauce
- 3 (3 ounce) packages ramen noodles (flavor packets discarded)

Preheat a large cooking vessel over medium heat and pour in the oil. Introduce chopped celery and carrots into the pot, then sprinkle with salt and pepper to enhance flavor. Allow these vegetables to soften, which should take around 10 minutes. Next, add minced garlic and ginger paste to the pot and cook until aromatic, approximately 1 minute.

Subsequently, pour in chicken stock and bring the mixture to a rolling boil. Add diced chicken and soy sauce to the pot, then let it simmer for 1 hour.

In a separate container, bring a substantial amount of water to the boil. Add ramen noodles and cook, stirring occasionally, until they are tender yet retain a slight firmness to the bite, approximately 2-3 minutes. Drain the noodles.

To present, pour ramen noodles into bowls and then ladle the chicken soup over them.
