Homemade Chicken Bone Broth

  • 3 pounds assorted chicken bones
  • 6 cloves garlic, unpeeled
  • 2 unpeeled carrots, cut into chunks
  • 2 stalks celery with leaves, cut into chunks
  • 1 onion, unpeeled and quartered
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 2 bay leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon black peppercorns
  • 12 cups water, or as needed

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).

Take all the ingredients - chicken bones, garlic cloves, carrots, celery, and onion - and place them on a baking sheet. Drizzle some olive oil over the top of everything, making sure they're all well-coated.

Put the baking sheet in the oven and let it roast for 30 minutes. Halfway through, give everything a good stir to ensure even cooking.

Take the roasted bones and vegetables out of the oven and transfer them into a large 6-quart slow cooker. Add some vinegar, bay leaves, salt, and peppercorns to give it a rich flavor.

Cover the slow cooker completely with water, making sure all the bones and vegetables are submerged. Then, cook it on a low setting for 24 to 48 hours - but don't overdo it, as this can make the broth too strong.

As you cook, add more water if necessary to keep everything covered. This will help the bones release their flavors and nutrients into the broth.

Once you're done cooking, strain the broth using a fine mesh strainer to remove any solids.
