Homemade Caramels
Ingredients
  • 1 pint heavy whipping cream
  • 2 cups white sugar
  • 1 cup packed brown sugar
  • 1 cup butter
  • 1 cup corn syrup
  • 1 cup evaporated milk
  • 1 1/4 teaspoons vanilla extract
Instructions
1
Preheat your oven to 350 degrees F (175 degrees C).
2
Next, take a 12x15-inch baking dish and give it a generous coating of butter or cooking spray to prevent sticking.
3
Attach a heat-resistant thermometer, specifically designed for measuring high temperatures, to the side of a medium-sized saucepan.
4
Add 1 cup of whipping cream, 2 tablespoons of white sugar, 1 tablespoon of brown sugar, 4 tablespoons of butter, 1/2 cup of corn syrup, and 1/2 cup of evaporated milk to the prepared saucepan.
5
Place the saucepan over medium heat and cook, stirring constantly, until the mixture reaches 250 degrees F (120 degrees C) on a candy thermometer.
6
Remove the saucepan from the heat source and let it cool slightly.
7
Add 1 teaspoon of vanilla extract to the mixture and stir well.
8
Pour the caramel mixture into the prepared 12x15-inch baking dish and let it cool completely.
9
Once set, cut the caramel into 60 small squares.
10
Wrap each square individually in wax paper for convenient storage.
