Ingredients
- 11 cups popped popcorn
- 1 cup Spanish peanuts
- 1 1/4 cups dark brown sugar
- 10 tablespoons unsalted butter, cut into pieces
- 1/4 cup dark corn syrup
- 1 teaspoon kosher salt

Preheat your oven to 250 degrees Fahrenheit (or 120 degrees Celsius, if you prefer metric).

Next, take a large and deep roasting pan and cover the bottom with popcorn; sprinkle peanuts evenly over the top of the popcorn.

In a saucepan, combine brown sugar, butter, corn syrup, and salt over medium-high heat. Stir constantly as the ingredients come together and the sugar and butter melt, resulting in a thick and caramelized sauce, approximately 2 to 3 minutes.

Pour the caramel sauce over the popcorn and peanuts, stirring until everything is fully coated; make sure to scrape any excess caramel from the bottom of the roasting pan.

Place the popcorn mixture in a preheated oven and stir occasionally until the caramel and popcorn are crispy, approximately 45 minutes.

Transfer the cooled popcorn mixture to a sheet of parchment paper in a single layer, allowing it to cool completely before serving.
