Homemade Caesar Salad
Ingredients
  • 1/2 (1 pound) loaf sourdough bread, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup butter, melted
  • 2 cloves garlic, pressed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, pressed
  • 3 anchovy fillets, chopped
  • 1 teaspoon kosher salt
  • 1 large egg yolk
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons grated Parmesan cheese, or more to taste
  • 1/4 teaspoon cracked black pepper, or more to taste
  • 3 romaine - washed, chopped, and chilled
Instructions
1
First, preheat your oven to 375 degrees F (190 degrees C). Next, position the bread on a rimmed baking sheet.
2
To create the bread mixture, whisk together oil, butter, garlic, salt, and pepper in a liquid measuring cup.
3
Then, pour the mixture over the bread and mix it thoroughly with your hands until the bread is evenly coated.
4
After that, spread the bread mixture into a single layer on the baking sheet.
5
To cook the bread, bake it in the preheated oven for 15 to 18 minutes, or until it reaches a golden brown and toasted color with a slightly soft center.
6
During the last few minutes of baking, gently toss the croutons to ensure even cooking.
7
Remove the bread from the oven and let it cool completely on the baking sheet.
8
In a large serving bowl, combine garlic, anchovies, and salt.
9
Then, use a fork to mash the mixture into a smooth paste.
10
Next, whisk together egg yolk, lemon juice, Dijon, and Worcestershire sauce until well combined.
11
After that, slowly whisk in olive oil until the mixture is smooth and fully incorporated.
12
Then, stir in 2 tablespoons of Parmesan cheese and a pinch of pepper.
13
Remove about 1/4 cup of the dressing mixture for future use.
14
When you're ready to serve, add lettuce and half of the croutons to a bowl with the remaining dressing.
15
Toss everything together until the lettuce is well coated.
16
Reserve the remaining croutons for another use.
17
Finally, sprinkle additional Parmesan cheese and pepper over the salad if desired. Serve immediately.
