Ingredients
- 1 1/2 pounds blanched whole almonds
- 1 pound Brazil nuts
- 1/2 pound walnut halves
- 1/2 pound pecan halves
- 1 1/2 pounds pitted dates
- 1/3 pound red candied cherries
- 1/3 pound green candied cherries
- 1 cup all-purpose flour
- 1 cup white sugar
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 4 eggs
- 2 teaspoons vanilla extract
Instructions
1
Preheat your oven to 275 degrees Fahrenheit (or 135 degrees Celsius, if you prefer metric). To prevent the loaf pans from sticking, cover them with a thin layer of non-stick cooking spray and line each pan with parchment paper.
2
In a large bowl, blend together the almonds, Brazil nuts, walnuts, pecans, and dates until they are evenly combined.
3
In a separate bowl, whisk together the flour, sugar, baking powder, and salt until they are well incorporated. Gradually add this mixture to the bowl with the nut and date mixture, stirring until everything is smooth.
4
In another bowl, whisk together the eggs and vanilla extract. Add this mixture to the bowl with the nut and flour mixture, stirring until everything is fully incorporated.
5
Press the mixture into the prepared loaf pans. Bake for 1 1/2 to 2 hours, or until a toothpick inserted into the center of each loaf comes out clean.
6
Allow the loaves to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
