Ingredients
- 1 1/2 cups white sugar
- 1/2 cup butter
- 2 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 1/2 cups packed brown sugar
- 2 egg whites
- 5 tablespoons water
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 tablespoon raisins for decorating
- 1/8 cup toasted almonds, for decoration
- 1/2 cup toasted pecans
- 1/4 cup red and green candied cherries
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take a 9x13-inch baking pan and grease it thoroughly with butter or cooking spray before dusting it lightly with flour.
3
To make the cake, combine granulated sugar and softened butter in a mixing bowl.
4
Add eggs one by one to the mixture, followed by 1 teaspoon of vanilla extract.
5
In a separate container, whisk together all-purpose flour and baking powder.
6
Gradually add the dry ingredients to the cake mixture, alternating with milk until you achieve a smooth batter.
7
Pour the cake batter into your prepared baking pan and bake it in the preheated oven until a toothpick inserted into the center comes out clean, approximately 30 minutes.
8
Allow the cake to cool completely on a wire rack before proceeding with the frosting.
9
To prepare the frosting, combine brown sugar, egg whites, water, and salt in a heat-proof bowl.
10
Place the bowl over a saucepan of boiling water and whip it with an electric mixer until stiff peaks form, taking about 10 minutes.
11
Remove the bowl from the heat and add another teaspoon of vanilla extract. Continue whipping until the frosting becomes thick.
12
Once the cake has cooled, spread a generous amount of frosting on top.
13
To decorate, place one large raisin in each corner and scatter toasted almonds, pecans, and red and green cherries all over the cake.
