Ingredients
- 1 (1 pound) beef skirt steak
- 1/3 cup hoisin sauce
- 3 tablespoons Chinese vinegar (or sherry vinegar)
- 1 tablespoon soy sauce
- 2 teaspoons hot sauce
- 2 teaspoons sesame oil
- 1 tablespoon grated fresh ginger root
- 4 cloves garlic, finely minced
- 1 tablespoon packed brown sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 green onion, light parts only, minced
- Toasted sesame seeds

Combine the ingredients of hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper in a large mixing container. Blend them well until they form a smooth mixture.

Cut the skirt steak into 4 or 5 smaller strips, cutting across the grain. Place these small pieces of steak in a bowl with the marinade and mix until they are evenly coated. Cover the bowl with plastic wrap and refrigerate; allow it to marinate for at least 2 hours or up to 12 hours.

Line a baking pan with paper towels and transfer the small pieces of steak to the paper towels. Wipe off some of the excess marinade from the steak pieces.

Preheat an outdoor grill to high heat and lightly brush it with oil. Transfer the small pieces of steak to the hot grill. Cook for 4 to 5 minutes per side, or until it reaches your desired level of doneness. Use a thermometer to check the internal temperature; it should be between 130 and 135 degrees F (about 54 degrees C). Thinner pieces may cook more quickly. Remove the steak from the grill and let it rest for a few minutes.

Transfer the cooked steak to a warm serving platter. Pour any juices that have accumulated around the steak over it. Sprinkle some sesame seeds and sliced green onions on top of the skirt steak.
