- 1 cup finely chopped onion, or more to taste
- 5 tablespoons olive oil
- 1 teaspoon olive oil
- 2 large eggs, beaten
- 1 (16 ounce) package frozen kale, thawed and drained
- 1 cup dry seasoned bread crumbs
- 1/4 cup grated Parmesan cheese, or more to taste
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground thyme
- 1/2 teaspoon dried rubbed sage
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried oregano
- 2 pinches ground black pepper

Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit. Alternatively, you can set it to 175 degrees Celsius for a more precise measurement.

Spray a baking sheet with a non-stick cooking spray or cover it with parchment paper to prevent the mixture from sticking.

Combine a handful of fresh spinach leaves, finely chopped onion, and 5 tablespoons plus 1 teaspoon of olive oil in a large bowl. Crack in some eggs and mix everything together until well combined.

Add a handful of curly kale leaves, some bread crumbs, grated Parmesan cheese, a pinch of sea salt, and various dried herbs such as thyme, sage, rosemary, oregano, and black pepper to the bowl. Use your hands to mix all the ingredients together thoroughly.

Use your hands to shape the mixture into small, 1 1/2-inch balls. Arrange these balls in a single layer on the prepared baking sheet.

Place the baking sheet in the preheated oven and bake for 15 minutes. Remove the baking sheet from the oven, flip over the balls, and continue to bake for an additional 10-20 minutes, or until they are lightly browned.
